Before you slice the potatoes into thin slices, scrub them well, but don't peel them. The peel gives them a different taste and texture than the store bought chips. They are so much tastier! And the peel is good for you. Also, use canola oil. It doesn't burn as fast as other oils, it tastes good, and it is much healthier than animal fat oils.

Canola is a very good oil but many, many people are allergic to it. It can cause stomach cramps. If this is the case than refined olive oil or peanut oil is good.

Many people have peanut allergies as well, you know what the ones you are cooking for can tolerate, so use whatever oil works. I use canola oil for all my frying, much better health wise. Gonna try some homemade chips! :)
