Individual Cherry Crisp

I prefer to serve crisps in individual ramekins and a dollop of French Vanilla Ice Cream to top the crisp.

Ingredients

  • 2 cups pitted cherries (slice Bings in half)
  • Advertisement

  • 4 Tbsp. superfine sugar
  • 2 tsp. all-purpose flour
  • 1/4 tsp. grated orange zest
  • 1/4 tsp. vanilla extract

Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 Tbsp. granulated sugar
  • 4 Tbsp. unsalted butter
  • 4 scant Tbsp. sliced almonds

Directions

Heat the oven to 375 degrees F. In a small bowl, combine the cherries, sugar, flour, orange zest, and vanilla extract. Divide among four ramekins.

For the topping: In a small bowl, combine the flour, brown sugar, and granulated sugar. Cut in the butter. Scatter the topping on top of the cherries. Sprinkle each ramekin with 1 Tbsp. of almonds.

Bake for about 30 minutes, until the topping is just brown and the cherry juice is bubbling through.

Serves 4

Sorry for my ignorance, but what are "ramekins" and where would I find them in the grocery store, or recipe to make them?? GlennHD

Ramekins are individual serving dishes that you bake in. They can be found at Walmart, etc.

Just a thought: If you needed a quick last minute dessert for unexpected company and didn't have time to pit cherries and prepare the cherry mixture you could use canned cherries and then will only need to prepare the topping and place in oven at a slightly reduced baking time.

This can be done with less sugar if using sweet cherries. Use 3 T. superfine sugar instead of 4, and omit the granulated sugar in the topping. I also used 1 packet of True Lime in place of the orange zest (get a free sample at www.truelemon.com/sample.cfm).

I also put this in a small casserole dish (probably a 1.5 qt. dish) instead of ramekins, and I baked it for the same amount of time.

We all loved it! It's a wonderful way to eat cherries!
