Potato Chip Cookies

My family loves this use for potato chip crumbs!

Ingredients:

  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 2 cups potato chips, slightly crushed
  • 1 cup walnuts or nut of your choice, chopped

Directions:

Cream shortening and sugars. Add eggs and vanilla; beat well. Add flour sifted with salt and soda. Stir until well mixed. Add chips and nuts. Drop on ungreased cookie sheet and bake 12 minutes at 350 degrees F.

Ingredients:

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 3/4 cup crushed ridged potato chips
  • 1/2 cup chopped pecans
  • 1 tsp. vanilla
  • 2 cups flour

Directions:

In mixing bowl, cream butter and sugar. Stir in potato chips and pecans. Add vanilla; mix well. Stir in flour just until dough pulls away from the sides of the bowl.

Shape into 1 inch balls. Place 2 inches apart on greased baking sheets. Flatten with a glass dipped in flour. Bake at 350 degrees F. for 12-15 minutes or until lightly browned. Makes 5 dozen

Ingredients

  • 1/2 cup (1 stick) salted butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg, well beaten
  • 1 cup all purpose flour
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1/2 cup finely crushed plain potato chips

Directions

Preheat oven to 350 degrees F. Cream butter and sugars together till smooth. Adding the egg; mix well. Slowly mix the flour and baking soda, making sure no lumps form. Stir in vanilla extract and potato chips. Drop by teaspoonfuls onto ungreased baking sheets, about 2 inches apart and bake for 9-12 minutes. Makes: 2 dozen.

(My sister in law makes a recipe similar to this one, she rolls her cookies in balls. Upon taking out of the oven, she rolls them in sifted powdered sugar.)
