Lemonade Scones

This recipe is quick and easy to make with limited ingredients. Great for serving with a cuppa or when visitors are coming.

Ingredients:

  • 3 cups self rising flour
  • 1 cup thickened cream
  • 1 cup fizzy lemonade
  • Handful of Sultanas* or other fruits (optional)

*Editor's Note: Sultanas are a type of grape or raisin. Any raisins or dried fruit could be substituted.

Directions:

Preheat oven to 200 degrees C (400 degrees F).

Place flour into a large bowl. Make well in the centre and add lemonade, cream, and fruit, and mix with a knife until just combined. Tip out onto floured surface and gently flatten out to 3 cm. (about 1 1/4 inch) thickness with floured hands. Cut into rounds using cutter or glass dipped into flour and place close together on lined baking tray. Bake for 12-15 minutes. Serve with favourite jam and cream.

Servings: approx 10-12
Prep Time: 10-15 Minutes
Cooking Time: 12-15 Minutes

What is thickened cream? Is it what we call whipping cream?

Hi Ladies, FIZZY LEMONADE is when the bottle/can is opened it still has
a fizz, this means that it hasn`t gone flat and lost its effervescents. I am sure Sprite could be used without any problem. Hope you enjoy.

THICKENED CREAM: Not sure what you call this in USA but here in Australia
we purchase a Thickened Cream or a Whipping Cream. I would say you could use the Whipping Cream but possibly not whip just use straight from container. This should work OK. Enjoy.
