A great way to use up that last bit of leftover turkey and leftover mashed potatoes.

I'm raised italian, and potato patties from leftover mashed are part of my upbringing and my comfort food. Even without the turkey, which sounds great, I mix the leftover mashed with same ingreds, but plus breadcrumbs and especially parmesan or romano cheese.

Pan fry till golden. I eat them with canned tuna on the side for a super cheapie comfort meal!

Oh my goodness sounds so good! Will be doing this even with leftover chicken and mbilar1's idea of adding parm! Thumbs up :-)

Sounds great. When does the egg go in? When mixing the potato, turkey and onion?

Editor's Note: This recipe has been edited to add the egg with mayo, mustard etc. The lightly beaten egg helps the patties stick together. Thanks for noticing it missing in the directions.
