Baked Hushpuppies

Ingredients:
  • 1/2 cup cornmeal
  • 1/2 cup all purpose flour
  • 1/2 tsp. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • dash of cayenne pepper
  • 1/3 cup milk
  • 1 egg, beaten
  • 1/4 cup chopped onion
  • 2 Tbsp. vegetable oil

Directions:

Combine all dry ingredients; add remaining ingredients and stir only till well blended. Place about 1 Tablespoon of batter into each part of well greased mini muffin pans. Bake at 425 degrees for 15-20 minutes or till done. Makes: about 2 dozen.

Leftover hushpuppies can be frozen.
