Coconut Macaroons

I like these cookies because I love coconut, they are nice and chewy, and they are really easy.

Ingredients:

  • 1 (14 oz.) bag coconut
  • Advertisement

  • 1 (14 oz.) can sweetened condensed milk
  • 2 tsp. vanilla

Directions:

Preheat oven to 400 F. Grease a cookie sheet really well. Mix the ingredients. Drop by small spoonfuls, about 2 teaspoons, onto the cookie sheet. Bake until golden (about 10 minutes, check after 7). Loosen from baking sheets with a moistened spatula and allow to cool.

Servings: Depends on the size you make them.
Prep Time: 5 Minutes
Cooking Time: 10 Minutes

My sweet husband loves coconut, and his favorite candy bar has always been a Mounds Bar ever since he was just a kid. Things haven't changed much in the past 70 years, and Mounds is still his favorite. I could make these, dip one end in chocolate, and he'd hardly know the difference. They sound so good Barb.

Ooops! I'm sorry, I must have forgotten to add the oven temperature. Bake them at 400 degrees. Sorry about that! And check a few minutes early to make sure they aren't getting too brown.

If they are, try reducing the heat to 375 - it all depends on your oven.
