We have recently purchased a second hand, pine, canopy bed, which I absolutely love - except! It squeaks terribly. I think it is from the slats rubbing on the boards holding the mattress up. Can I do anything to make it stop? Put beeswax on both pieces of wood? Please don't tell me that it is irreparable.

I'd try some thin rubber washers stuck in strategic spots.

Try sprinkling talcum powder wherever the slats might rub against other wood or where something (like the frame of your boxspring) might rub against the bedslats. (This works when talcum is sprinkled between squeaky floor boards, so I think it's worth a try!)
I just finished looking through a Harriet Carter catalog, and they have an item in there I've never seen before. It is supposed to solve that problem. They are called Bed Supports, six to a package. They are used to do away with the bed slats that squeak. Not very expensive. Just may work.
