Strawberry Surprise Cake

Ingredients

• 2 cups mini marshmallows
• 2 cups sliced strawberries
• 3 oz. strawberry gelatin
• 2 1/2 cups flour
• 1/2 tsp. salt
• 3 tsp. baking powder

• 3 eggs
• 1 stick margarine
• 1 cup sugar
• 1 cup milk
• 1 tsp. vanilla

Directions

Mix strawberries and gelatin together (juice and all); set aside. Grease 9x13 inch pan. Spread marshmallows evenly in pan. Mix sugar and margarine; add eggs and vanilla. Beat well. Add dry ingredients mixed together alternately with milk; beat well. Mixture will be stiff. Carefully spoon batter over marshmallows; spread gently. Spoon strawberry mix over top. Bake at 350 degrees F for 30 minutes, then at 300 degrees F for 20 minutes. (Strawberries sink; marshmallows come to the top.)
