Fresh Blueberry Crisp

A fruit crisp is a baked fruit dessert with a sweet, crunchy topping. Quick and easy to put together, and you never have to worry too much about what to do with leftovers. There seldom are any. A great family favorite that travels well for picnics and and as a pot luck take-a-long.

Ingredients:

  • 1/3 cup granulated sugar
  • 2 Tbsp. cornstarch
  • 3 pints blueberries (about 7 1/2 cups)
  • 1 Tbsp. fresh lemon juice
  • 3/4 cup old-fashioned or quick-cooking oats
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/2 tsp. ground cinnamon
  • 4 Tbsp. cold butter or margarine, cut up

Directions:

Preheat oven to 375 degrees F.

In large bowl, stir granulated sugar and cornstarch until blended. Add blueberries and lemon juice; toss to coat. Pour blueberries into shallow 2 1/2-quart baking dish and spread evenly.

In same bowl, combine oats, brown sugar, flour, and cinnamon. With fingertips or two knives, work in butter until coarse crumbs form. Press crumb mixture together and sprinkle on top of blueberry mixture.

Bake crisp 35 to 40 minutes or until top is browned and fruit is bubbling at edge. Cool on wire rack 1 hour to serve warm, or cool completely to serve later.

Prep Time: 15 minutes
Cooking Time: 35-40 minutes

Source: This is another CooksOnline recipe, but has been in my own recipe box for about 40 years. When I couldn't get fresh blueberries, I'd use the canned Maine wild blueberries which are more like the old Florida wild huckleberries known for their rich and delicious flavor.

We used to get Blueberry Crisps once in a while in our grammar school
cafeteria. More often we had the apple crisps which was everyone's

favorite. As I grew to appreciate the more delicate flavor of blueberries,
I would have had a difficult time deciding which I liked better.

I think crisps are one of those desserts that are so easily made and which
survive a trip to almost anywhere that it's become the one everyone likes
best for covered dish sharing.

I used to find the cans of Maine Wild Blueberries, but haven't seen them in some time now. I hope they are still being produced as they have the most flavor of any blueberry I've ever tasted. I'll have to look some more and if I can find them, I'd really like to try this recipe with them. I'd forgotten how great blueberry crisps are. Hot from the oven with a big scoop of vanilla ice-cream, it makes the most luscious dessert.

We get the best huge blueberries in the markets here now. This is a great way to take advantage of their lush goodness too. They are so plump and sweet.

I love fruit pies, but crisps are even better. They are a lot easier to make than pie, and taste even better. I have made many crisps, but not with blueberries. I'll give this recipe a try. Thank you once again for a great recipe!

There are two places that I should stay away from when I'm hungry. One
is the grocery store, and the other is Thrifty Fun's Recipe Group. This crisp sounds so good that I'll be eating a peanut butter sandwich just to quiet my wolf so I can go to sleep. We shall have a blueberry crisp this weekend though, I promise you. It's locked into my mind now.

There are some TF family member who should have a"caution"sticker next to their entries. So far I'm safe just putting all these yummy recipes in a folder. I'm a sweetaholic! A new word that should be put in the dictionary. ; )

I gave up losing weight. My scale is now a decorated fixture in the bathroom.
