Matanuska Valley Cornmeal Banana Bread

Cornmeal gives this lovely bread a wonderful flavor and texture. It's great lightly toasted and spread with butter or cream cheese.

Ingredients:

  • 1 cup cornmeal
  • 1 cup flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup very ripe, mashed banana
  • 1/2 cup melted butter
  • 1 cup chopped nuts

Directions:

Mix dry ingredients and set aside. Beat eggs well. Add bananas and butter. Add dry ingredients and stir until well blended. Add chopped nuts. Stir lightly. Grease bottom only (not sides) of loaf pan. Sprinkle bottom of pan lightly with cornmeal. Pour batter into pan and bake in 350 degree F oven for 60 to 70 minutes or until bread tests done. Cool on a rack.
