Taco Bean Salad

This is a great meal for a hot summer day or evening. Very filling and good!

Ingredients:

  • 1 head lettuce, chopped
  • 1 lb. ground beef, cooked, drained and cooled
  • Advertisement

  • 1 (15 oz.) can garbanzo beans, drained
  • 1 (15 oz.) can pinto beans, drained
  • 1 small can black pitted olives (drained)
  • 1 bunch green onions, chopped
  • 1 tomato, cut in wedges (I prefer to use a lot more tomato)
  • 1 1/2 cups mayonnaise
  • 1 cup taco sauce

Directions:

In large salad bowl, combine lettuce, beans, onions, olives and cooked ground beef. Cover and refrigerate. Combine mayonnaise and taco sauce. Cover and refrigerate dressing. Just before serving, toss dressing and veggies lightly and arrange tomato wedges in a circle on salad. Top with crushed taco chips.
