Green Jello Salad

This is an unusual, colorful, flavorful JELL-O recipe. The combination of ingredients may sound odd, but they combine quite well. The mayonnaise makes the dish especially creamy. Though I've placed it in the dessert category (and used dessert in the title), my mother and I have always just called this "Green Salad". We often eat it as a meal, with saltine crackers! (The saltiness of the crackers complements the sweetness of the dish.) This has been a family favorite for over 20 years. If we fail to make it for a family gathering, we usually get in trouble!

Ingredients:

  • 2 (3 oz.) boxes lime JELL-O gelatin
  • 4 cups boiling water
  • 1 (16 oz.) bag miniature marshmallows
  • 1/2 pint whipping cream
  • 1/2 cup sugar
  • 1/2 cup mayonnaise (not salad dressing)
  • 1/2 cup coarsely grated cheddar cheese (not finely grated)
  • 1/2 cup pecans, chopped
  • 1 (1 lb. 4 oz.) can crushed pineapple

Directions:

In large, sturdy mixing bowl, mix JELL-O, and boiling water till gelatin is completely dissolved; add entire package of marshmallows while gelatin mixture is still hot. Allow mixture to cool, then mix in whipping cream and sugar (gently but thoroughly). Add mayonnaise and blend. Add cheese, nuts, and pineapple to gelatin mixture and blend. Pour mixture into 8x8x2 inch Pyrex dish (or similar, sufficient to hold quantity). Chill till set.
