Rice Custard Pudding

This is a perfect way to use leftover rice. Add whatever amount you have. Once you try this simple and delicious dessert, you will arrange for leftover rice on purpose!

Ingredients:

  • 4 eggs
  • 1/2 cup sugar
  • 1/8 tsp. salt
  • 1 tsp. vanilla extract
  • 3 cups milk (can be fat-free), scalded
  • 1 1/2 to 3 cups leftover cooked rice
  • 1/2 cup of raisins (optional)
  • 1/2 tsp. each of cinnamon and nutmeg.

Directions:

Preheat oven to 325 degrees F.

Whisk together first 4 ingredients. Add milk, rice, and raisins and stir together. Pour into a lightly greased baking dish. Sprinkle nutmeg and cinnamon over the top. Set baking dish in a pan of hot water (about 2 inches of water is enough) and bake for 1 hour 45 minutes or until a knife inserted in center comes out clean.

Servings: 6 to 8 ample servings
Time:10 Minutes Preparation Time
1 hour 45 Minutes Cooking Time

Source: My Mother taught me how to make this when I was a teenager. Coming from a large family, nothing in our kitchen ever went to waste.
