Morning Glory Muffins

These muffins have so many good things in them, it's like a smorgasbord of delightful eating. Filled with energy-making good things, they are a delicious breakfast food or midday snack.

Ingredients:

  • 2 cups flour
  • 1 Tbsp. baking powder
  • 1 Tbsp. cinnamon
  • 1/4 heaping tsp. cloves
  • 1/4 heaping tsp. ginger
  • 1/4 heaping tsp. nutmeg
  • 1/4 heaping tsp. mace
  • 1/4 heaping tsp. salt
  • 3/4 cup granulated sugar
  • 1 cup dark brown sugar
  • 3 eggs beaten
  • 1 cup oil
  • 1 Tbsp. vanilla
  • 1 cup coconut
  • 2 cups raw carrots, shredded
  • 1/2 cup raisins
  • 1 apple, chopped
  • 1/2 cup chopped pecans

Directions:

Sift flour, baking powder, salt, and all spices together. Mix in sugars and set aside in a large mixing bowl. Beat eggs, add oil and vanilla and mix well. Add the egg mixture to the dry ingredients and mix until all the flour is moistened. Add apple, coconut, raisins, pecans, and shredded carrots. Stir to mix well. Batter will be very thick.

Grease muffin tins with solid shortening like Crisco. Fill muffin tins 2/3 full.

This recipe makes 18-24 regular sized muffins or 24-36 small ones depending on size. Bake in a 375 degree F oven for about 25-30 minutes for the regular sized muffins, and 18-22 minutes for the small ones. Much depends on your own oven and the sizes of your muffin tins. Test for doneness.

These muffins sound so good and good for you too. I will definitely be giving them a try this weekend. Sunday mornings are the only mornings we have time for a good hearty breakfast while still lazing around reading the morning paper and just resting. Fluffly scrambled eggs, plenty of good fresh hot coffee and these muffins sound just the ticket for spoiling ourselves this weekend.

Thank you for another great recipe Pookarina. This is a definite "thumbs up" for us.

I will really enjoy the coconut and all the spices and fruit. Can't get that out of the box.

We've eaten at the Barnhill's in Jackson, Mississippi, and have eaten their Morning Glory Muffins many
times. I so often wished for the recipe but was always too shy to ask. I'm very happy to find it here and not at all surprised that I did. I always get the best recipes at Thrifty Fun.

This recipe sounds a lot like the muffins my Mom made that were like little carrot cakes with raisins and nuts. I think she also put crushed pineapple in them, but it's been so long ago now that I've forgotten. Sure wish I'd paid more attention and wrote down all her special recipes. She was from the old school kind of cooking and baking and did everything from scratch with few exceptions.

I almost missed this recipe Pookarina. I always look for your entries and have never been disappointed.
Love all the "extras" in this recipe so will be trying them soon. Never thought about loadig up a muffin with so many different things, but they sound wonderful.

We like to make muffins on the weekend and I try to make several different varieties hoping there'll be enough to use in our lunches the rest of the week. These sound like there's alot more to them than just "fluff" and will make an ideal mid-morning or lunch snack.

Ingredients

  • 2 1/2 cups flour
  • 1 1/4 cups sugar
  • 3 tsp. ground cinnamon
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 3 eggs
  • 3/4 cup applesauce
  • Advertisement

  • 1/2 cup vegetable oil
  • 1 tsp. vanilla
  • 2 cups grated carrots
  • 1 medium tart apple, peeled and grated
  • 1 can crushed pineapple, drained (8oz)
  • 1/2 cup flaked coconut
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Directions

In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir into dry ingredients just until moistened (batter will be thick). Stir in carrots, apple, pineapple, coconut, raisins and nuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
