This is a great snack recipe. Also, you can make substitutions to it to change it up and make it taste different. Soy butter, almond butter, cashew butter, etc can be used in place of peanut butter. You can also use creamed or liquid honey, agave nectar or molasses in place of the honey. Instead of coconut, try some type of crushed cereal, wheat germ, whole wheat flour, granola, or cocoa powder.

If you cannot find ground flax seed you can buy it whole and grind it yourself in a coffee grinder. You can also use regular size chocolate chips or substitute raisins, cranberries, or chopped nuts in place of the chocolate chips.

Ingredients:

  • 1 cup oatmeal
  • 1/2 cup peanut butter (or other nut butter)
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flax seed
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla

Directions:

Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.

This an amazing recipe! Hands down! In lieu of chocolate chips might I suggest 'carob chips' made from all natural ingredients. They can be found in health food stores or now in most local grocery stores oftentimes in the BIN (scoop your own) section your favorite food shop.They look exactly like chocolate chips, are just as sweet but there is nothing artificial about them.

Carob powder (St.John's Bread) is also available for making hot chocolate and the kids can't tell the difference. I can't tell the difference my self except for the health benefits! Just a thought. -Delta44
