Microwave Rocky Road Candy

Bronze Post Medal for All Time! 170 Posts
So quick, easy, and oh so good!

Ingredients:

  • 1 (11-12 oz.) pkg. semisweet chocolate chips
  • 1 (11-12 oz.) pkg. butterscotch chips
  • Advertisement

  • 1 cup creamy peanut butter
  • 3/4 cup unsalted peanuts (dry roasted)
  • 8 oz. mini marshmallows

Directions:

Mix chocolate chips, butterscotch chips, and peanut butter in a microwave safe bowl. Microwave for about 3 minutes, stirring often, until mixture is smooth. Make sure to watch so that you don't burn. Some microwaves work faster, so you might not need to melt for the full 3 minutes.

When mixture is smooth, stir in the marshmallows and peanuts. Spread in a buttered 9 inch pan. Refrigerate until firm. Cut into squares. Makes about 2 dozen pieces. Hope you enjoy these as much as we do.
