Cauliflower Casserole Au Gratin

This is one of my favorite vegetable recipes!

Ingredients

  • 8 cups cauliflower, cut into small pieces
  • 3 Tbsp. of margarine
  • 3 Tbsp. of all-purpose flour

  • 1 cup of milk
  • 1 cup of sour cream
  • 3 Tbsp. of dried parsley
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/8 tsp. of nutmeg
  • 1 2.8 oz. can of french fried onions

Directions

Pre-heat oven to 375 degrees F. Cook the cauliflower (steamed or boiled)until tender crisp. Place in a large, buttered casserole dish and set aside. In a medium sauce pan, melt the margarine over low heat. Add flour and stir or whisk together to form a smooth paste. Whisk in the milk and cook stirring constantly , until thickened.

Remove from heat and add sour cream, parsley, salt, pepper, and nutmeg. Pour the sauce over the cauliflower, stirring to caot thoroughly. Place the fried onions in a baggie and use rolling pin to cumble them into fine crumbs. (you can use a blender or food processor if you wish).

Sprinkle the crumbs over the cauliflower mixture. Bake for 20 to 25 minutes or until the sauce is bubbly and the top is golden brown.
