Garbanzo Bean Salad

For a completely different flavor experience you can switch the parsley with 1/4 cup of fresh chopped cilantro and lime juice for the lemon juice instead ;-)

Ingredients:

  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 2 Tbsp. red onions, chopped
  • 1 tsp. minced garlic
  • 1 small tomato, diced
  • 1/2 cup fresh Italian parsley
  • 3 Tbsp. extra virgin olive oil
  • 1 Tbsp. fresh lemon juice
  • Salt and pepper to taste

Directions:

Combine the beans, onion, garlic, tomato, parsley, olive oil and lemon juice together in a bowl, season with salt and pepper to taste, chill for at least 2 hours to allow flavors to blend and serve.

Looks good. I'm tempted to omit the lemon juice and use balsamic in its place.
