Greek Cinnamon Rice Pudding

This pudding recipe is also delicious and preferred by many cooks because it does not require careful attention, as no eggs are used.

  • 4 cups milk
  • 4 Tbsp. butter OR (canola oil)
  • 1/4 cups sugar
  • 1/8 tsp. salt
  • 1/2 cup small to medium grain rice
  • Cinnamon

Directions

Combine all ingredients except cinnamon in a saucepan. Bring to a boil, lower heat, and simmer until thick, stirring often. Cooking time will be approximately 1-1/2 hours.

Pour into a serving dish or individual cups or small bowls. Dust with cinnamon. Serve warm or chilled.

Serves 6 to 8.

I wonder if you could do this in the crockpot/slow cooker? Thanks for the recipe though, roomie's kiddos LOVE rice pudding, but the little girl and I are both sensitive to eggs.
