Make Cookies on an Electric Griddle

Take your store bought or homemade (yummy) cookie dough and "bake" it on a electric griddle. Especially good when you don't want to heat up the kitchen on a hot day or just want a few cookies. Cook for about 5 minutes on each side, crunchy on both sides and yummy soft in the middle! I would imagine the temp would be something close to the oven temp, but since all appliances are different and the kitchen variables make a difference too, play around with it.

That's a great idea! I like to make cookie dough and freeze the unbaked cookies so that I can make just 6 at a time. That way we (meaning ME) won't eat too many at once. I'll try this. Thanks

Here is my recipe for cookies made on an electric skillet. They are delicious and great with tea or coffee.

Welsh Cookies

(In Parenthesis is half recipe)

6 cups flour (3 cups)
2 cups sugar (1 cups)
1/2 tsp nutmeg (1/4 tsp)
1 tsp salt (1/2 tsp)
1 tsp cream tartar (1/2 tsp)
1 tsp baking powder (1/2 tsp)
1 tsp baking soda (1/2 tsp)
2 sticks butter, cold (1 stick)
1 cup lard (1/2 cup)
1/2 box currants, NOT raisins (1/4 box)
3 eggs (whisk, measure and divide in half)
1/2 tsp vanilla (1/4 tsp)
1/2 cup milk (1/4 cup)

Mix first 7 ingredients in a large bowl. Next cut in butter and lard.Add currants. Add next 4 ingredients. Mix thoroughly with a wooden spoon. Chill batter about 45 minutes.

Roll out abut 1/2 inch thick. Cut with a round biscuit or cookie cutter. Fry on an un-greased Teflon griddle or electric skillet set at 350 degrees. Cook till lightly browned on each side. Do not over cook or they will be dry. Cool on racks and sift on powdered sugar.

Hint: If freezing, don't add powdered sugar until the cookies thaw.

I'm sorry for the confusion. The picture is from the original poster. The recipe was posted as feedback by someone else. However, the tip is about baking cookies so any recipe could be used.

Do let us know how this technique works with your favorite cookie recipe.
