Grandmother's Chicken and Dumplings

Ingredients

  • 1 fryer or hen
  • 1 Tbsp. salt
  • 1/4 tsp. pepper
  • 6 cups water or more
  • 2 cups self-rising flour
  • 1/4 tsp. garlic powder
  • 1/2 cup

Directions

Combine chicken, salt, pepper, and about 6 cups water in a Dutch or large pot. Bring to a boil; cover and simmer 2 hours or until chicken is tender. Remove chicken from broth; cool. De bone chicken. If necessary, add more water to broth. Return chicken to broth, and bring to a boil. Combine flour and water to make a soft dough; stir well. Turn dough out on a lightly floured surface; knead gently 30 seconds. Roll dough to 1/8-inch thickness; cut into 1/2x4 inch strips. Drop strips into boiling broth. Cover and reduce heat; simmer 5 minutes. You may keep chicken out and add to dumplings last, may also cook chicken in crockpot all night on low heat.

Hi,
This recipe sounds delicious but it's incomplete. I have several questions.

1) In the ingredients, you list garlic powder but don't mention how it's used. Is it added to the broth or the dough?

2) The last ingredient is "1/2 cup," but you don't mention what the ingredient is.

3) How is this a dumpling recipe? The strips of flour and water sound more like pasta or noodles. An interesting variation might be to roll the dough into balls or gnocchis, with bits of chicken meat inside.

Regardless, this sounds like great simple comfort food and would love to make it after I get the clarifications. Thanks for posting.

answer to questions.

1/2 cup chicken broth for the last item, add garlic power to the broth with chicken. This is an old recipe, very good.
