Buying Dairy

When buying dairy, always buy the largest container possible. Check the expiration date and make sure you will be able to use it before it expires, especially with items like milk and eggs that are difficult to freeze.

Don't pay extra for shredded cheese. You can buy a large block of cheese, grate the the block, and freeze any that you don't think you will use quickly. Don't buy small yogurt containers when you can buy a large one for much cheaper.

Milk is usually good up to a week past it's expiration date if it's been stored correctly. If you see milk in the store that's going to expire soon, talk to the dairy manager about getting a big discount.

Milk is not difficult to freeze. I bought several gallons a while back that were about to expire. Just open the jugs, pour a cupful out to make room for expansion, replace the cap and set in the freezer. Take it out when needed, allowing time for it to thaw in the refrigerator. It does not alter the milk in any way...looks and tastes like fresh.

I buy farm eggs from a coworker. Although they stay good in the fridge for a very long time, when they become 3 weeks old, I crack all of them, whisk a little and pour into ice trays, freeze and then when frozen pop into a freezer bag or container. will be good for about 6 months. I imagine you can also separate and do just the whites.
