Tomato Pie

Living in the south, we are so blessed to have so many fresh fruits and vegetables. Having so many means coming up with creative ways to prepare them. This recipe is a favorite for those who love fresh tomatoes.

Ingredients:

  • 1 can of biscuits (about 6) or
  • 1 can of croissant rolls
  • 2 medium tomatoes
  • 2 green onions
  • Italian seasoning
  • 1/2 tsp. chopped garlic
  • Cajun seasoning
  • 1 (8 oz) pkg shredded mozzarella cheese
  • mayonnaise

Directions:

Place uncooked biscuits one at a time in the bottom of a deep-dish pie pan and press together until they cover the bottom of the pan. Slice tomatoes into quarters, arrange a layer on top of biscuits. Sprinkle with onions, Italian seasoning, chopped garlic and cajun seasoning. Put remaining biscuits on top. In a separate bowl, mix cheese and just enough mayo to make it spreadable. Put mixture on top. Bake about 25 minutes at 400 degrees F.

Note: You can peel your tomatoes before hand if you wish. Just depends on your diet.
