Bubble and Squeak

We got this recipe from British friends who were camping with us one year. It is filling, healthy, and makes a great one-pot dinner for potlucks or camping. It is as easy as can be, fairly inexpensive, and uses only 4 ingredients.

Ingredients:

  • 1 small head of cabbage or 1/2 large head, chopped
  • 5 medium potatoes, sliced in bite size wheels
  • 1 or 2 Polish or Kielbasa type sausages (all kinds I tried were great, even bulk sausage!)
  • 1 cup water

Directions:

In a large pot or frying pan, layer chopped cabbage, potatoes, sausage, then repeat until all ingredients are used. Add water, cover, and simmer until cabbage and potatoes and sausages are cooked; probably about 15 or 20 minutes.

Servings: 4 to 6 big servings, 8 to 10 small
Prep Time: 5 to 10 Minutes
Cooking Time: 15 to 20 Minutes

My, was this recipe good! I made it last night for supper and did just as the recipe stated. We both loved it! Thank you for posting this recipe.

This is a little different from the Bubble & Squeak I had as a child in England - many years ago! Monday was always washday, which was a big deal in those days with no washers and dryers - and even worse when it rained (which was often) and the laundry had to be hung around the house to dry.

Anyway, Monday dinner was usually left-overs which would be some of the roast from the night before and Bubble & Squeak, which was leftover cooked potatoes and cabbage, mixed together and fried in hot fat - lard or bacon fat - until brown and crispy, (no one knew about cholesterol in those days). I have to admit that Jacketbackers recipe sounds awfully good - will have to try it.

What a great post! And as Joan (below) mentioned a healthy advantage over the old Bubble and Squeak from many a year ago. Of course, my favorite notion regarding this recipe is that it takes few ingredients, is cost-effective and, more importantly, saves time.

Further, it is great for camping, summer kitchens, the B-B-Q (if you have a boil element on it OR improvise over an open fire-pit) plus...it's a great winter dish as well! Thank you ever so much for this!

Great recipe guys. When you say layer the cabbage, spuds & sausage; Do you mean spread the cabbage 1 layer thick, the spuds 1 layer thick, the sausage 1 layer thick and then repeat until all the ingredients are in the pot?
