Passion Fruit Delight

Lovely on a hot summer's day; just serve with cream or ice cream.

Ingredients:

  • 1 pkg. lemon jelly crystals (lemon gelatin)
  • 1 cup boiling water
  • Advertisement

  • 2 eggs
  • 1/2 cup sugar (I use castor or superfine sugar)
  • 1 cup Carnation milk (available at supermarkets)
  • 3 passion fruits (pulp only)

Directions:

Make jelly with boiling water and pour into reasonable size serving dish.

Beat eggs with sugar and add Carnation milk. Pour this mixture into the hot jelly stirring until well mixed. Add passion fruit pulp. Put in refrigerator and chill until set.

Scoop out desired amount for each person, and serve with whipped cream or ice cream.

Servings: 4-6
Prep Time: 5-10 Minutes
Cooking Time: 5 Minutes

Is the Carnation milk canned evaporated milk or Carnation dry powdered milk?
