Make Cornbread stuffing according to directions. Add drained can of regular corn and add whole can of creamed corn. Heat and serve. This is our favorite corn casserole at my house.

This is a potato recipe that's quick and easy to fix for the 2 of us.

2 red potatoes
1/2 of a large onion
salt & pepper to taste
pats of butter

grated sharp chedder cheese

Wash the potatoes. Do not peel. Slice into a microwave dish that has a cover. Slice the onion and separate the rings and place them on top of the potatoes. Sprinkle with a little salt and pepper and add a few dots of butter or margarine. Cover and microwave on high for about 8 minutes or until potatoes are done. Remove from oven and place cheese on top and microwave uncovered for 1 minute.

Today I made crock pot BBQ chicken and it was really good:

6 chicken breasts
1 bottle BBQ sauce
1/2 cup italian dressing (I started with powdered)

3/4 cup brown sugar (I used less)
2 TB Worsteschire sauce (accidentally left out)

I also served it with baked potatoes. Husband liked it too.

From way way back, when I was a Girl Scout, we made:

Cuppa Cuppa Egg Cookies
1 cup peanut butter
1 cup sugar
1 egg

Mix, roll into balls, press down and make the criss-cross pattern with the back of a fork across the top, and bake.

(Lets see, I usually add 1/2 tsp vanilla, and sprinkle some more sugar on the cookies before baking at 350 F degrees until done. Maybe 9 minutes?)
