Casserole Recipes Using Egg Noodles?

I bought some egg noodles (they happen to be egg-free) at a great price (50 cents for 12 oz). I thought I'd figure out how to cook them later! I know there are noodle casseroles, but don't seem to be able to find many recipes at all, and I would like recipes, esp. without tuna because of the mercury issue. Thanks to anyone who can help!

I have a recipe I got from "The Tightwad Gazette" for creating a casserole dinner.
1 cup main ingredient (tuna, cubed chicken, turkey, ham or seafood)
1 cup second ingredient (thinly sliced celery, mushrooms, peas, chopped hard-cooked eggs)
1 to 2 cups starchy ingredient (thinly sliced potatoes, cooked noodles or cooked rice)
1 1/2 cup binder (cream sauce, sour cream or a can of soup)
1/4 cup "goodie" (pimento, olives, almonds or water chestnuts)
seasoning
Topping (potato chips, cheese or bread crumbs)

Thoroughly mix your combinations of the above ingredients. If it seems dry, add 1/2 cup milk or stock. Place in a buttered casserole dish and bake at 350 degrees for 30-45 minutes.

This is a very good way to use up leftovers.

Noodles for DESSERT!

Water
1 teaspoon salt
1 1/2 cup wide noodles
1 egg (beat well)
3 tablespoons sugar
1 tablespoon butter or margarine
1/4 teaspoon cinnamon
1/2 cup raisins ( I soak mine first)
1/8 teaspoon salt
1 1/8 cups cottage cheese
3/8 cup sour cream
Preheat oven to 350°F. Place water in a saucepan with salt and bring to boil. Add noodles and cook for 10 minutes. Drain and place in mixing bowl. Add the rest of the ingredients. Blend well. Pour into a greased casserole. Bake in 350°F oven for 30 minutes.

12 oz. noodles
3 eggs
3/4 c. sugar
4 tbsp. dry bread crumbs

4 tbsp. vegetable shortening
3/4 tsp. cinnamon
1 1/2 tbsp. lemon juice
3/4 tsp. grated lemon rind
1 c. raisins
1/2 c. chopped almonds
Cook noodles, drain, rinse. Mix with beaten eggs and sugar. Add balance of ingredients and pour into well greased casserole. Bake 400 degrees for 45 minutes or until brown.
Optional topping: 1 tsp. cinnamon 1 tbsp. sugar
Mix together and sprinkle over kugel before baking.

My family likes this better than regular lasagna. You can get creative and add more spices or ingredients.

LAZY LASAGNA

12 oz. egg noodles, cooked
2/3 cup Romano and/or Parmesan cheese
16 oz. ricotta or creamed cottage cheese
2 eggs, lightly beaten
1 1/4 cup shredded mozzarella cheese, divided
5 cups spaghetti sauce

Preheat oven to 375°.

In large bowl, gently toss noodles with combined cheeses and eggs. Optional, add 1/8 teaspoon nutmeg to noodle mixture.

In a greased 3-quart casserole, spoon enough sauce to cover bottom. Layer the noodle mixture and sauce, repeat., ending with sauce.

Bake 25-30 minutes. Top with additional mozzarella cheese, and bake 10 minutes or until cheese melts.

If desired, cooked ground beef, sausage or pepperoni can be added to the sauce.

I make a stroganoff type casserole with egg noddles. I put in ground beef and cream of mushroom soup and sour creme and Worcestershire sauce. the Worcestershire sauce is only a small amount like a tsp or two and the rest I just put in depending on how big I want to make it. Sometimes I add green beans for fun and if I am really feeling in the mood I will mix in the green beans and put tater tots on top.

Without the extras it actually freezes/reheats quite well. I imagine you can try a similar recipe with cream of chicken and chicken pieces and maybe throw in some Chinese noodles on top for crunch? Hope this helps a little.

My fav is Chicken & Noodles. Bring water to a boil & cook 2c noodles about 10min. Drain but keep the noodle water aside. Mix one can chicken, one can cream of chicken soup, noodles & the noodle water for as runny as you like it. I also freeze the noodle water to use later when cooking mashed potatoes, etc!

I make stroganoff like the previous post, with egg noodles ALL the time, sometimes I switch it up & use chicken chunks & cream of chicken soup instead of cream of mushroom soup. You can also switch up Mac & Cheese for egg noodles instead of elbow noodles.

I am making this tonight for dinner;

Family Chicken Noodle Bake

3 c. cooked chicken, shredded or cut up
2 - 10-3/4 oz. cans cream of mushroom soup

or 1 can cream of Mushroom & 1 Can Cream of Chicken
1-1/4 c. milk
10-oz. pkg. frozen peas
16-oz. frozen wide egg noodles, cooked
1 sleeve round buttery crackers, crushed

In an un greased 2-quart casserole dish, mix together shredded chicken, soup, milk and peas. Add noodles; stir to coat. Bake at 350 degrees for 30 minutes. Sprinkle with cracker crumbs and bake for an additional 5 minutes. Serves 4 to 6.

I love noodles and I have a quick recipie here as a side dish I use it alot it was just somthing I threw together one day.Depending on the size of your family cook the noodles as they say on bag.You can just cook a handfull if you want somthing quick for your self.After they are cooked and rinsed a little put back into kettle you cooked them on keeping the flame on low, add some butter about a half a stick ,mix it up add some salt,also some parmesan cheese, mix it up.Now taste it if you feel you would like more cheese or butter add untill it suit's your taste.And that is the end of the story! It really is good!!!! P.S you can add parsley for a little color.

Johnny Marzetti

2 tablespoons butter
2 medium onions, chopped
1 clove garlic, minced
1 clove garlic, minced
1 pound lean ground beef
1 can (6 ounces) tomato paste
1 1/2 cups water
2 cans (4 ounces each) sliced mushrooms, undrained
1 cup chopped celery
1 green bell pepper, chopped
1 teaspoon vinegar
salt and pepper to taste
8 ounces shredded Cheddar cheese
8 ounces broad noodles
PREPARATION:
Melt butter; add onions and garlic and cook until softened. Add ground beef; cook until browned. Stir in tomato paste, water, mushrooms with liquid, celery, green pepper, vinegar, salt, pepper, and cheese.

Simmer 15 to 20 minutes. Cook noodles until just tender in boiling salted water. Drain then mix with sauce. Cover and cook slowly for 30 minutes longer, or bake at 350° for 30 to 45 minutes.

Ham Noodle Casserole

8 ounces wide egg noodles, about 4 to 5 cups
3 tablespoons butter
1/4 cup finely chopped onion
2 eggs, beaten
1/2 cup sour cream
1 1/2 to 2 cups cooked diced ham
1/4 teaspoon pepper
1/4 cup buttered bread crumbs

PREPARATION:
Heat oven to 350°. Butter a 1-quart baking dish. Cook noodles in boiling salted water, following package directions; drain. In large skillet, melt butter. Add onion; cook, stirring frequently, until onion is tender.

In large bowl, stir together the beaten eggs and sour cream. Stir in onion mixture, ham, and pepper. Stir in hot noodles; pour into prepared baking dish. Sprinkle bread crumbs over top; cover and bake 30 to 35 minutes or until hot and bubbly.
Serves 4.

I forgot to add that whenever a recipe calls for lasagne noodles I substitute it with egg noodles, or a different shape of pasta. I don't like dealing with lasagne noodles.
