Stir-Fried Asparagus

Ingredients:

  • 1 lb. fresh asparagus
  • 1-2 Tbsp. safflower oil
  • soy sauce

Directions:

Wash asparagus and cut off woody portion of stem. Cut into 1 1/2 inch thick pieces, cutting on the diagonal. Heat wok or heavy pan to 375 degrees F. Add oil and heat. Toss the fresh asparagus and cook until tender crisp. Sprinkle with 3-4 dashes of soy sauce. Cover and steam 1-2 minutes.

We've never thought to stir-fry asparagus. (We normally bake it in the oven with olive oil and garlic.) This is a great alternative. Thanks!
