Pumpkin and Currant Cookies

Ingredients:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 2 eggs
  • 1-1/4 pumpkin puree
  • 2 cups flour (cake or plain)
  • 1 Tbsp. baking powder

  • 1 tsp. cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 2/3 cup currants

Directions:

Preheat oven to 350 degrees F. Cream butter and sugar. Add eggs and pumpkin puree: Mix well. Blend in flour, baking powder, cinnamon, nutmeg, salt and currants.

Drop by spoonfuls onto greased cookie sheet. Bake for 10 minutes. Cool on wire rack.

Years ago my mom bought me a cookie cookbook. Never tried any of the recipes. But one year we decided to break from tradition. We tried the peanut butter cookies and the pumpkin currant cookies. Omg!!! The pumpkin cookies were like soft moist clouds of heaven. I do t know what happened to that book. I know I left it at her house and assumed it was still there. When she passed earlier this year I thought Id find it well packing things up...no such luck. I dont know if someone picked it up or if she lent it to someone. But Im feeling a bit nostalgic now that the holidays are upon us. So I went looking for a recipe that was similar to the one from the cookie book.

Many recipes later and none tickle my memory. Until this one. The unsalted butter and cake flour and the simplicity of the recipe, its all triggering my memory. I can remember telling my mom we need Unsalted butter. And her telling me why? If we need to add salt why not just get regular butter? The look on her face and the way I cracked up so bad....Anyways this recipe seems like the one we used to make. And for that I am grateful. Its gonna bring back some very happy memories of baking with mom and if the flavor is just as good, memories for the family as well.
