Easy Pumpkin Spice Cookies

This is a fast, easy, yummy cookie recipe for Halloween!

Ingredients:

  • 1 (18oz) pkg. carrot cake mix with pudding
  • 1 cup canned pumpkin
  • 1/4 cup margarine or butter, melted
  • 1 egg
  • 1 (16oz) can cream cheese ready-to-spread frosting
  • 16 candy pumpkins

Directions:

In large bowl, combine cake mix, pumpkin, margarine, and egg; stir until well combined. Drop dough by rounded tablespoonfuls onto greased cookie sheets. Bake at 350 degrees F for 12-15 minutes, or until puffed and set in center. Cool 2 min; remove from cookie sheets. Cool 15 minutes or until completely cooled. Frost cooled cookies. Press 1 candy pumpkin onto each cookie. Makes 3 dozen

I don't add candy either. The cinnamon addition sounds really good, never thought of that & I love cinnamon! Thanks!

Tried these tonight. They are great, so yummy! The only thing I changed is the icing. I used can cream cheese icing but added a little cinnamon and a few drops of vanilla and maple flavoring, as I don't care for the taste of can icing, but love the convenience, and my kids are older and really don't like the candy. Thanks for the great recipe!

Recipe: Easy Pumpkin Spice Cookies

Ingredients
  • 1 box spice cake mix
  • 1 12 ounce can solid pack pumpkin
  • 1 cup chocolate chips or raisins (optional)

Directions

Heat oven to 350 degrees F. Lightly grease baking sheet. Stir together ingredients and drop by rounded Tablespoon onto greased cookie sheet. Bake in middle of oven for 8-10 minutes. These are soft cookies and need to finish cooking on hot baking sheet. Remove when lightly browned on edges and let stand 5 minutes on baking sheet.
