A seasonal favorite of our family.


  • 4 eggs
  • 1 2/3 cups granulated sugar
  • 1 cup cooking oil
  • 1 (16 oz.) can pumpkin
  • 2 cups flour
  • Advertisement

  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda


  • 1 (3oz.) pkg. cream cheese
  • 1/2 cup butter, softened
  • 1 tsp. vanilla
  • 2 cups powdered sugar


For bars: Beat together eggs and sugar until fluffy and light; gradually add oil and pumpkin. Add the remaining ingredients, and mix thoroughly. Spread batter in ungreased 10x15 inch baking pan. Bake at 350 degrees F for 25-30 minutes. Cool and frost with frosting.

For frosting: Beat all ingredients until smooth. Frost cooled bars.

Cooking Time: 25-30 Minutes

Combine all ingredients. Beat until smooth and pour batter into 9x13 inch pan. Bake at 350 degrees. Cream frosting ingredients together until smooth.

I'm trying out so many recipes and using up the pumpkin I found on the curb, that I baked and pureed. This recipe is not sweet, but you can add more sweetener than called for.


It is also versatile, and you can use ingredients you already have in your pantry.

In a mixing bowl, combine the first six ingredients. Add egg, egg whites, pumpkin, oil and water; mix well. Transfer to an 11x7x2 inch baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the middle comes out clean. Cool on a wire rack.

Preheat oven to 400 degrees. In a small bowl, cm 1/2 cup margarine, 1/3 cup granulated sugar and 1/4 tsp. vanilla. Add 1 cup flour; mix well.

Combine oats and dry ingredients. Add butter; beat at low speed until crumbly. Reserve 1 1/2 cups and press remaining on bottom of greased 13x9 inch pan. Bake at 375 degrees F. for 10 minutes.
