Stuffed French ToastSaute' onion and sausage in butter in skillet, stirring until sausage is brown and crumbly; drain. Combine with cream cheese, salt, pepper and bacon in bowl; mix well. Cut bread into slices making every other cut to but not through bottom to form pockets.

Jalapeno ChickenOil casserole dish and line with tortilla strips; combine all other ingredients, except cheese, and pout 1/2 of mixture over tortillas, repeat, then top with cheese. Refrigerate for 24 hours then bake at 300 degrees F for 1 1/2 hours.

Fish With Black BeansIn a 12 inch skillet, over medium heat, place fish in chicken broth along with cumin, coriander, chili powder, oregano, garlic, salt, and pepper then bring to a boil. Turn off heat, cover, and let rest 5 minutes.

Butterscotch Crunch Coffee CakeSift flour. Add baking powder, salt, and sugar. Beat egg, combine with milk and slightly cooled shortening. Add to flour mixture. Stir only enough to moisten flour.

Tossed Salad With PeachesSlice three peaches; set aside. Cut the remaining peach in half; place in a blender. Add the sugar, lemon juice, vinegars and salt; cover and process until blended. While processing, gradually add oil in a steady stream.

Apricot Pecan Brie TartsBake pecans at 350 degrees F in a shallow pan 10 to 15 minutes or until toasted; cool. Remove rind from cheese, cut into 24 cubes, set aside.
