As a cake decorator, I go by this rule: 9x13, one mix; 12x15, 2 mixes; 12x18, 3 mixes. Each pan is approx. 2 inches deep. I would feel confident using 3 mixes in your 12x20 pan; probably your shallow pan would measure around 2 inches. That should be just fine...
