The nice thing about making such a large amount at a time is that you can place leftover, individual scoops of the potatoes on a baking sheet, allow to freeze and then place in freezer bags.

Grandma's Lentil SoupMy grandmother lived to a ripe old age of 99. She was brought up in the Pennsylvania Dutch area. Being frugal, she taught me this unusual way to make this lentil soup. It reminds me of the classic children's story "The Stone Soup".
