Vegetable Latkes

They are traditional and healthy at the same time.

Ingredients:

  • 1 head of cauliflower
  • 1 bag frozen spinach
  • 2 grated onions
  • 3 eggs

  • 1 cup of matzoh meal
  • salt and pepper
  • olive oil for frying

Directions:

Boil cauliflower and drain - mash well. Boil spinach and drain. Mix with mashed cauliflower. Add 2 grated onions, 3 eggs, matzoh meal, and spices.

Shape into small pancakes.

Heat olive oil until very hot. Cook latkes about 4 minutes on each side and then bake at 400 degrees F for half an hour before serving.

I'm of Slovak/Polish descent and I've never heard of a good Latke having cauliflowers and spinach. Also, we use flour, grated potatoes and onions in a great Latke. Also, never, never use olive oil for frying. You need hot oil to fry these (and anything else that is fried).

Olive oil burns at a very low temperature. You should only use Peanut Oil for deep frying or any other kind of frying. It has the highest burn temp of all the oils.
