An easy to make flavorful treat whether served as a snack or appetizer.

Ingredients:

  • 1 puff pastry sheet (from 17.3 oz package), thawed
  • 1/2 cup cheddar cheese, finely shredded
  • 1/2 cup of canned diced jalapenos, drained
  • 1/4 cup blue cheese dressing (I recommend Marie's brand), if desired

Directions:

Preheat oven to 400 degrees F.

Unfold pastry sheet on a lightly floured surface, roll the pastry sheet into a 12 x 12 inch square, cut into 2 inch squares (36), prick each square with a fork and place the squares onto a large baking sheet.

Bake until golden brown, about 8 minutes, remove from oven and press down the centers of the squares with the back of a small spoon to make an indentation.

Spoon 1/2 teaspoon each of first the cheese and then the jalapenos onto each square, bake until the cheese is melted, about 5 minutes, place squares on a wire rack and let cool for 10 minutes.

Top each with the blue cheese dressing before serving.

Easy Fire Roasted Salsa
To make this recipe even easier you can use canned diced jalapenos to taste. However freshly roasting them brings out a smoky, almost sweet flavor.

Ingredients:

  • 2 (14 oz.) cans fire roasted tomatoes, drained
  • 1 large jalapeno
  • 1 tsp. minced garlic, or more to taste
  • salt to taste
  • fresh chopped cilantro to taste, if desired

Directions:

Roast jalapeno on a grill or in an ungreased skillet over medium high heat, turning until blackened on all sides, about 5 to10 minutes, and place in a small plastic baggie until cooled. Remove the seeds after cooled if you prefer less heat flavor.

Place tomatoes, jalapeno, and garlic in a blender or food processor and pulse until chunky. Season with salt to taste keeping in mind the amount of sodium already in the canned tomatoes and add cilantro if desired. Serve immediately or refrigerate for up to 4 days or even freeze for up to 3 months.

Turkey and White Bean Soup
This is really good, and great for freezing for another meal.

Ingredients:

  • 5 turkey sausages, remove casings
  • small onion diced
  • 1 jalapeno pepper seeded and diced
  • 1 clove garlic minced
  • 2 tsp. chili powder
  • 2 Tbsp. of tomato paste
  • 900 ml carton chicken broth, I use low sodium
  • 540 ml white kidney beans drained and rinsed
  • 2 cups of chopped kale
  • 1/4 cup of lime juice

Directions:

Heat a large pot over medium heat. Add sausages. Use a fork to break up the meat and cook stirring often about 4 to 5 minutes.

Stir in onion, pepper, garlic, chili powder, and tomato paste. Cook until onion is soft about 3 minutes.

Add broth and 2 cups of water. Bring to a boil and reduce heat to medium. Add beans and kale. Stirring occasionally, until kale is cooked, about 5 minutes.

Remove from heat, stir in lime juice just before serving.

Easy Strawberry Banana Jello Pie
Easy, cool, no bake, low calorie, even good for breakfast.

Ingredients:

  • graham cracker crust
  • two or three bananas
  • six strawberries
  • strawberry banana Jello

Directions:

Boil water and make Jello as stated on package.

While you're waiting for the Jello to cool (important or you'll get a soggy crust), wash strawberries.

When Jello is sufficiently cool, cut bananas into bite size pieces. Put in the graham cracker crust. Cut strawberries and put on top of bananas.

Pour cooled Jello over mixture almost to top. Cool in refrigerator until Jello has jelled.

Top with Cool Whip and eat.
