how about a ensalada de nopales or cactus salad? Cut up the nopales, and add chopped/diced tomato, onion, cilantro, avocado, fresh garlic glove, a small jalapeno pepper and toss with fresh lemon or lime juice. Its so good. chill in fridge before serving.
