Elephant Ears
A week or so ago, someone was asking for a "elephant ear" recipe, I was just going through recipe books I could put in a garage sale and came across this one.

Marshmallow Fruit Dip
My Aunt gave me this recipe. She caters weddings and this is one of her staple recipes. It is the best fruit dip I have ever eaten. Enjoy!

Stay Thin Spaghetti
Instead of pasta, I take cabbage or bok choy (chinese cabbage) and cook it tender and crisp. Along with onions, Swiss chard, spinach or any combination of those.

Stir Fry
It's cheap and easy. You use only the ingredients you have on hand. Put a little oil in the pan and saute some chopped onion and garlic for a few minutes.

Baked Spinach Dip
Melt cream cheese and Monterrey jack cheese in a large sauce pan over low heat, stirring constantly. Remove from heat when blended (it will look like a clumpy mess for a while).

It's quick and easy. Mix the eggs and melted cheese together in a bowl. Then dip the slices of bread in to the bowl until they have soaked the mixture all up.

Greek Spaghetti and Meatballs
Another of my Greek papa's recipes. I absolutely love the the orange and cinnamon flavor. It freezes well so I always make an extra batch ;-)

This is a VERY old recipe that is not real clear on amounts, but you can pretty much figure out the amounts you need as you go. NOT a dish that I, personally like much, but it was a favorite of my dad's and so we had it a lot.

Peanut Butter Cocoa Crispie Bars
Melt chocolate chips with the peanut butter in a medium sauce pan until smooth and creamy on low heat stirring constantly. Add cocoa crispies cereal and stir until well coated.

Shirred Eggs
Eggs nestled in a bed of tomato and prosciutto, yum! Heat oven to 375 degrees F. In a medium bowl, combine the oil, vinegar, tomatoes, and 1 tablespoon of chives.
