Spinach PotatoesVery good veggie recipe. Cook potatoes in boiling water in saucepan until tender; drain. Mash with sour cream and margarine in bowl. Add spinach, onion, sugar, salt and pepper; mix well.

Chilled Berry SoupWash strawberries and remove stems. Whirl all ingredients in a blender or food processor. If the soup is too thick, stir in a little more water. Cover and refrigerate until cold.

Ramen and EggsCook the ramen only 2 1/2 minutes (not three), with seasoning packet. Then in a in a frying pan, cook eggs, slightly over medium, (you want just a little runny. Chop the eggs into 1/2 strips.

Spiced Cherry TeaThis is a great drink either hot or cold, but I prefer cold. Mix all ingredients in large saucepan. Simmer for 1 hour. Strain to remove whole spices. Ladle into serving mugs or chill and serve cold in tall glasses.

Marmalade (Apricot) CakePreheat oven to 350 degrees F (180C). Beat margarine and sugar till creamy. Add marmalade then add other ingredients alternately. Put in greased or floured 1lb loaf tin. (I use non stick cake tin liners which makes it easy to remove cake, too!)

Asparagus with Honey MustardAnother flavor for asparagus because I love asparagus ;-) Bring water to boil and cook asparagus over medium heat until crisp but tender. Mix honey, mustard, lemon juice and olive oi in small bowl. Drizzle mixture over cooked and drained asparagus and serve.
