Grilled GuacamoleThis is a nice twist on the usual guacamole. You grill the avocados before you add them to the rest of the ingredients. The result is a guacamole with a lovely, deep smokey flavour. You can grill your avocados on your outdoor grill or indoor grill pan. I used the grill portion of a panini press.

 

Easy Baby Back RibsMy friend brought me a big rack of ribs before heading out of town. As it's so hot in Southern California, I decided to make them outside on the outdoor griddle. This was super easy to do and I barely had to tend to them. I gave it a spice rub, put it on the heat, flipped it once, then brushed it with my favourite barbecue sauce. They were perfect!

 

Cucumber SaladA flexible recipe that you can make as much or as little as you want. Some people add sliced raw onions, but I do not like raw onions. This is very refreshing on a hot summer day. It keeps well and tastes better as the flavors mingle. Cucumbers are very plentiful and inexpensive this time of year. If you grown them yourself, like I do, this dish costs pennies.
