Cucumber Salad on dinner plateA flexible recipe that you can make as much or as little as you want. Some people add sliced raw onions, but I do not like raw onions. This is very refreshing on a hot summer day. It keeps well and tastes better as the flavors mingle. Cucumbers are very plentiful and inexpensive this time of year. If you grown them yourself, like I do, this dish costs pennies.

Prep Time: 5 minutes

Cook Time: 0

Total Time: 5 minutes, plus a few hours chilling time.

Ingredients:

Steps:

  1. Peel and slice cucumbers.
  2. peeled & cut Cucumber
     
  3. Combine equal amounts of white vinegar* and water with a pinch of sugar. Pour over the cucumbers There should be enough to cover them.
  4. Cucumber Salad
     
  5. Refrigerate for a couple of hours or overnight.
  6. Cucumber Salad in refridgerator

  7. If desired, add salt and pepper before eating.

*Note: you can reduce the vinegar if you prefer.
