Mom's Shortbread Cookies

My mom is 85 years young. Every Christmas she makes these cookies along with a few of her others. This shortbread recipe is delish! They melt in your mouth, and the recipe makes a large amount.

They keep well in the freezer if you don't eat them all first! Great with a cuppa tea or coffee.

Ingredients:

  • 4 cups flour
  • 1 cup icing sugar
  • 1/4 cup brown sugar
  • 2 Tbsp. cornstarch
  • 1 lb. butter
  • 1 egg yolk

Directions:

Preheat oven to 350 degrees F.

Cream butter and egg yolk together. Add dry ingredients, then mix all together well will become a slightly stiff dough. With your hands, roll into 1 inch balls and flatten with a floured fork. Bake till golden brown.

Servings: 12 Dozen
Prep Time: 15 Minutes
Cooking Time: 10 -15 Minutes

You are so lucky to still have your mom Donna, and I'm sure you treasure your time with her. It's also wonderful that she is still baking cookies for her loved ones, no doubt with the same love that she's always baked into them. The cookies sound so good. I'd love to have more of her special recipes if and when you have time.

We really are lucky and she really still does go all out at Christmas for all her kids, 5 grandchildren and 6 Great Grandchildren! I will add a few more all the recipes make 12 doz. So we love it at Christmas. She even does both light and dark fruit cakes.
Makes a goodie bag for us all! Definitely lots of love!
Pic is Mom & Dad on their 60th. Dad is gone and Mom carries on.

Icing sugar is the same as confectioner's sugar. Same sugar you use to make frosting.
