Antipasto Salad
If you're like me you'll want to make up extra because it will keep up to a week in the fridge for more meals. The best part is that it tastes even better after marinating a day or two.

A great finger food, keep lots in the freezer for gatherings. Combine ingredients and refrigerate 30 minutes. Roll bread slices with rolling pin. Place 2 Tbsp. filling on each slice.

I don't remember where I got this recipe but people who usually doesn't like potato soup, likes this. I really like this recipe because you can add spices you like and it's real fast, and good. This is easily doubled. Be great for gifts.

Leftover Turkey Casserole
A yummy way to use up Thanksgiving and/or Christmas leftovers. Preheat oven to 350 degrees F. Mix stuffing and 1/4 cup onions in a medium bowl and spoon stuffing mixture into a 9x9 inch baking dish, gently pressing along the bottom.
