Quick and oh, so easy and definitely good. This is a last minute recipe cause only takes about fifteen minutes.

Banana Kebabs in ChutneyYummy curry to eat with rice or roti. Boil, peel and grate the bananas. Chop all the greens fine. Add all the greens to the grated bananas and mix well.

Eggs in Potato PocketsPrepare potatoes as directed on package. Mix in onion, pimiento and pepper. Spread in greased shallow 2 1/2 qt baking dish. Break eggs into 1/2 inch depressions in potatoes.

Mexi Corn SaladNot the usual corn salad, but one with a Mexican flavor, can be made into a dip also. In a bowl mix the corn, mayo, onion and cheese. Just before serving, top with slightly crushed chili corn chips (Fritos)

Versatile Vegetable Beef Soup (Freezer Meal)Another soup that can be mixed and matched with different additions. Cut the stew beef into bite size pieces. Brown the meat thoroughly, crumbling the hamburger into bite size or smaller pieces.

Arby's Horsey Sauce (Copycat)Mix all ingredients together well. Keep refrigerated, tightly covered. The sauce will stay fresh for up to 2 weeks.

Chicken CutletsServe with a salad or mash and gravy or in a sandwich. In a large bowl mix the chicken, greens, spices and lemon juice. Shape into discs 1/4 inch thickness.

Christmas Pistachio BarsYummy and Quick and easy! Combine confectioners' sugar and pistachio pudding. Add cream and margarine. Knead until ingredients are thoroughly mixed. Shape mixture into 1 inch balls.

Frozen Cranberry SaladQuick and easy to make. Combine cranberry sauce, pineapple, marshmallows, and lemon juice. Spread in bottom of 8x8 inch pan. Combine whipped cream, mayonnaise and sugar.

Pumpkin Dump CakeA deliciously different and simple to prepare pumpkin cake. All you do is dump! Mix pumpkin, milk, eggs, sugar, salt, and cinnamon. Pour mixture into a greased 9x13 inch casserole dish.

Mix and Match Chicken SoupThis soup is so versatile because I can add different things, or thicken it up and put it over noodles or rice, or make dumplings, or any number of other ways of fixing it.

Rhubarb CrispCook first ingredients in saucepan on low til thickens. Mix second set of ingredients in bowl. Place 1/2 mixture on bottom of 9x13 inch pan and pat down.

Spinach and PeanutsThe nuts gives this dish a crunch. Heat oil in a pan. Fry onion till light brown. Add garlic and chili. Then add tomato and cook a little. Add the spinach cook till done and liquid has evaporated.
