Spinach and Peanuts

The nuts gives this dish a crunch.

Ingredients:

  • 1 bunch spinach, cleaned, cut and washed or the frozen pack.
  • 1 medium onion sliced
  • 2 red chili (optional)
  • Ad

  • 1 medium tomato chopped.
  • 1/4 cup roasted peanuts (if nuts are salted add salt sparingly)
  • 2 Tbsp. sunflower oil

Directions:

Heat oil in a pan. Fry onion till light brown. Add garlic and chili. Then add tomato and cook a little. Add the spinach cook till done and liquid has evaporated. Add the peanuts and cook for few minutes.

Serve while hot with rice or roti.

Servings: 4-5
Time:20 Minutes Preparation Time
30-35 Minutes Cooking Time

Sounds yummy! I'll give it a try but, as much as I like hot and spicy, think I'll only use 1/2 red chili ;-) Thanks for sharing the recipe!
