I saw this recipe and had to try it! My favorite candies are caramel and marshmallow and these did not disappoint. I was a little nervous about making the caramel in the microwave. I have my old stand-by that involves stirring the mixture constantly for a full hour! But, these turned out delicious, and it was so much easier to make. They were gone so quickly, I am ashamed to admit.
One of my fondest childhood memories was when my mom, my sisters and I prepared baked goodies for Christmas. My favorite was when we made melktert (milk tart). Melktert is a famous South African delicacy, part of our food heritage.
These are my favourite things to make after Thanksgiving, Christmas, or any time I have an abundance of leftover mashed potatoes. These waffles are creamy in the middle and crispy on the outside; perfect for breakfast with some eggs or just on their own. Definitely a fun twist on a leftover item.
