Instant Pot Cranberry Orange MarmaladeI was craving my mum's homemade orange marmalade the other morning but had ran out of it. She uses lots of orange zest in hers, which I love, so I thought I'd try to remake it with a bit of a twist in my Instant Pot... because I wanted it in an instant! I added fresh cranberries to it since we have so many around for the holidays. What a tangy delight! I'll be making plenty of jars to give out for the holidays.
Tarragon Soy Avocado SaladThis is one of my absolute favourite ways to use avocado. Using soy sauce instead of salt really gives depth to the savoury flavours, while the tarragon really punches through the creaminess and livens things up. This is originally my mother's longtime recipe, and the way she got me hooked on the heart-healthy avocado when I was very young. Thanks Mama!
Pineapple Coconut Carrot CakeA very sweet, moist, and fruity carrot cake, that is based on this recipe. Carrot cake can be dry so I am glad that the pineapple helped solve that. I am doubling the baking time because it literally took twice as long as what the link said.
Roasting a Pie PumpkinA couple weeks ago I celebrated the last lingering rays of fall by finally baking up the pumpkin I bought at the farmer's market for Halloween. Specifically, it was a pie pumpkin, not a Jack-O-Lantern. Taco LasagnaMy guests went crazy when they tasted this Taco Lasagna. What a great party pleaser! It has everything you need. No need for chips, just plates and forks and good beverages. You can make this mild, medium or hot! I would suggest doing some items mild and some medium. It is a good mix.
