Buried beneath a layer of delicious sage dressing, you'll find tender pork chops, seasoned and browned first in a heavy skillet. Served with just a tossed salad or maybe an English Pea Salad, it is a wonderful and tasty meal.

Quick and Healthy Potato SaladPlace whole potatoes (do not poke) into microwave-safe dish. Cover dish (if covering dish with plastic wrap, poke small hole in plastic). Microwave on HIGH for 10 to 12 minutes depending on strength of microwave.

Southwestern Chicken Barley SoupWay too easy and if you live alone like me, there will be lots of leftovers to share with friends or to refrigerate and/or freeze for the future. The market I usually shop at doesn't carry pearl barley but I found it at the health food store a couple of doors away.
