In Tahiti, we have a lot of Chinese influence when it comes to cooking. I do most of my cooking with a wok. Therefore, I have revised a delicious Chinese dish here and created one of my own. This is my version of Chinese Ginger Chicken that is served at many of the snack trucks here on the islands.
Vetkoek (fried dough bread) is another well-loved part of our South African food heritage. Whenever we have church bazaars, you can bet your bottom dollar that vetkoek will be sold at one of the food stalls. It can be served with savory mince, or cheese and honey, or cheese and jam.
I came up with this cake when my husband had the flu and asked, "Why do all things honey lemon have to be medicine?" Let's just say that's been remedied. This cake is very moist and always hits the spot. I've gotten asked for the recipe by everyone who has tried it, even non-bakers. I used an amazing local honey from Washington state, but I have been successful making this using all kinds of honey (squeezy bear, too).
